Good idea too. I fold the foil over and it kind of steams the skin off while it cools. I also think just a spray of oil works find instead of drowing them in oil. How do you make your roasted peppers? I'm always looking for tips.

One trick I learned to peeling the skin is to let them cool for ~10 min in a container with Saran wrap on top, it makes the skin easier to peel!
