In a mixing bowl, cream 2 cups brown sugar, 1 cup vegetable oil, 2 eggs and 2 tsp vanilla. Once it's creamy and caramel in color; add 1 1/2 c canned pumpkin. Blend well

Next add the dry ingredients: 3 cups bread flour, 1 tsp each of baking powder, soda and salt,  1 1/2 tsp cinnamon and 1/2 tsp pumpkin pie spice.  Mix this until it forms the dough

I use a large scooper and only fill about two thirds full.

Scoop out with plenty of room between each whoopie pie. Leave the scoop round and mounded up; these aren't like cookie, no need to press down the batter

Bake for 12-15 minutes at 325 degrees. This recipe makes about 20 whoopie pie sandwiches. I use cream cheese frosting as the filing

Omg! I haven't made these in ages. I love whoopie pies!! My mom and I used to make chocolate ones with a white cream filing when I was a child. They are so yummy straight out of the freezer ✌

The filling is just a brick of cream cheese, a stick of butter (both room temp) and a box of powdered sugar. Beat that in a mixer until it comes together.

Lisa I bet you could substitute something else. I know they make all Linda of whoopie pies so I don't see why not :)
