This biscuits are very tasty, high in protein, rich just in good fats, no added sugar/honey, dairy free, gluten free. All ingredients are very healthy! What else can you ask! :)

It is not crucial, really. I used coconut flour because I like nutrients that gives me. You can use or white flour or rice flour, it depends if you want to get gluten free biscuits or not. There is another option, if you prefer more proteins the protein powder it's even better solution( vanilla flavor).

No, actually, I'm sorry I was holding them in the fridge, just for 3 days, not in the freezer. But I guess you can hold then there as well so you just defrost them before using.

Maggie you don't have to use plums, I had to add them coz they make(together with raisins) this biscuits sweet. And that's my favorite fruit so it was just my choice. You can add let's say fresh Raspberries or Blueberries, something that would make this biscuits sweet. Of even dry figs. They are very sweet as well.

Hi. Normally when we talk about protein powder we mean whey protein. Whey protein is delicate stuff and will not withstand high temperatures. The amino acids which make up the powder will be destroyed, rendering the addition of it useless. I would just add more nuts to the recipe to increase protein or, if possible, add more egg whites.

Pablo it's not a measure it's a number of slices. 4x7=28 because you slice the whole thing in 4 lines and then you slice again each part and you get in each line 7 biscuits. ;)

Thanks so much Heidi. I'm really sorry for your husband coz I know the way some disease can change your life. Fruit :/ as you probably know all types of fruit contain sugar. I would recommend you maybe Cranberries and Raspberries. Cranberries have 12g carbohydrates, 5g fiber and 4g of sugar, raspberries have 12 g carbohydrates, 7g fiber and 4g sugar. So I would say it's one of good options. What I would recommend is to read about cinnamon benefits when controlling diabetes. I'm always looking for delicious snacks just like this! My husband is a diabetic. Carbohydrate-Rich (anything) is not good for any diabetic. Ooh Aleksandra!!!! Why why why did you post this?!!!! This has to be just heavenly!!! I'm personally looking for very high fibre fruits... Any suggestions... Ooh, another idea... Give lemon peel a try when warm weather is around... Yokes, please don't throw it out! Put it in an airtight glass and use it for breading fish, et... Mix it with water or cream or milk and use it as egg-wash. If you have to use it right away, creme brûlée is heavenly.. Oy! Yes- its fattening.. But certainly not something one eats regularly. 1-2 times a year?! Or... Cook it and use for fried rice? Or if you have furry canines, cook it and add (little bit) to their dinner.

@Luke I think you can leave them for 10 days. Even though I have never tried that I do think it's possible. We ate them in 2 days(3 of us) coz we couldn't control.:) If you think you are not going to eat all that you can prepare half of the size. But you'll eat at least 4 of them a day so still that's 7 days. Next time I'll try that. To leave them for 10 days so I see what will happen. ( another good idea you gave to me)

@ Derek that's a great idea. Actually this biscuits are not too rich in protein but they are comparing to other biscuits. I think the best about this recipe it that all ingredients are very healthy and that the sugar comes just from plums and raisins which are in the same time rich in fiber. Adding some protein powder would make them perfect. I have never cooked before with protein powder... Have to learn that. Thank you guys for great ideas! Next time I prepare this biscuits will be much better! ;)

Just to say in regard to those wanting to use this recipe as a bodybuilding source, adding the egg yolk will not massively boost the protein as most of the protein from an egg is in the white. The yolk is full of fat and cholesterol. If you really want to up the protein just add some protein powder. Alternatively maybe the protein powder could be used in some kind of frosting...

To keep them for 10 days wouldn't be any problem, I'm sure. Coz you don't put any milk, yolk, or something that can stay just for 3 days. In this case you need 10 egg whites coz all other ingredients are very dry. If you want to put let's say 6 or 7 egg whites you just put less coconut flour, let's say add 100g instead of 200g. Coz the coconut flour is very dry ingredient. And that would be also great coz of calories(remember that 100g of coconut flour has 660 kcal, 64g of fat and 23g of carbohydrates). Actually you gave me some new ideas now!:)

Hi! Thanks! :) I'm not an expert really. But I wouldn't recommend you sugar. Yolks are ok, but not 10 of them( that's a lot of cholesterol). I suppose you want to gain muscles not fat. So you better take some healthy snacks like almonds(575 kcal, 22g of protein), hazelnuts(646 kcal, 15g of protein), pumpkin seeds( 559 kcal, 30g of protein), dry fruit like raisins, plums, bananas( they are rich in fiber) . And seriously try to avoid cereal based snacks or regular biscuits, they are just rich in sugar. Eat food with good proportion of Carbohydrates/ proteins like beans, peas, lentils, quinoa. So you don't gain just fat, but also some muscles. ;)

Yes Super Girl!:) In Europe we call them flour. So they are the same things we just use names coconut flour for desiccated coconut and almond flour for almond meal. :)

@Chris I got 28 slices(7x4). In this case I wouldn't put yolks inside the mixture. 10 yolks would made the mixture very different and yolks without sugar :/ I don't think it would taste good. If you have any suggestion how to include yolks in this recipe( without adding any sugar) please text me coz I was feeling sorry throwing them away .

Here in Italy I buy egg whites in packaging of 1liter. I have never prepared a cake with those whites. Coz I was usually using 2/3 eggs for cakes, not 10 of them.:) I'll try to use them next time. If you want to try just remember that 1 egg white has around 33g so don't use the whole packaging.

I'll explain to you why I didn't add yolks here. The first reason was coz of calories. The second reason was that would change proportion fat/proteins. The third was coz I wanted to prepare something with just good fats. This was my first time I prepared this kind of biscuits and that was the first idea. Now you can add yolks, give it a try. Or you can simply fry those yolks and use it with some salad.

No there is no need for that coz hazelnuts are already very greasy. You just place them in the pan on a very low heat and fry them till you don't see it's done. Don't burn them!:)

Ah.. Yes.. It's geography. ;). Coconut flour in the states is usually like white flour as you said. I have both coconut flour and "medium shaved coconut" which looks like what you have there. I think course is better in this. Thanks for the recipe. Looks amazing.

We call it here coconut flour. You have very fine coconut flour which is very similar to white flour. And it's called 'extra fine coconut flour'. This one here is just regular coconut flour. I don't know how it looks shaved coconut really. :/ It could be the same thing. What do you think?

Thanks! It depends of ingredients you want to avoid. You can put instead of egg whites around 250g of butter. In that case you add just 100g of coconut flour. And you can chop that orange there. I think it would be ok. But then you'll have less proteins.
