Bring water and vinegar to a simmer on med low heat. Do not boil
Once simmering stir water with spoon
Immediately after stirring crack egg in center simmer for 2 1/2 min or until desired doneness. I like my eggs over easy.
Remove egg with a spoon draining all excess liquid.
Perfect poached egg to add to any dish.
I like a poached egg on my cheeseburger.

its supposed to almost coat and trap the egg into the same space, stopping it to split too much. It helps more as it cooks more, which is why you egg goes wrong straight away, however if you get it right in the first 10seconds, the vinegar has hadlonger to work with a more together egg... I think.
It helps the egg stay together. Not a stupid question. Wish I had a better answer but this is how I learned to do it in the restaurant industry

This is just one way of doing this. Ive got a feeling people maybe given false confidence after this. Youve done a great job because making a perfect poached egg is tough. Your looks well tasty.
