Take the middle seed piece and trim off the peel. Cut off the flesh from this piece.

The scoring part is best to do with a table knife. Much less chance of cutting through the skin or yourself. :)

It's a bit trial and error. Start 1/2 inch from the black stem spot and start slicing. If you meet resistance from the seed pull out your knife a little then move it outward and try again! Hope this helps:)
