Water MUST BE BOILING or it won't work. I also added some food coloring to have a little fun. Add the water incrementally  and Knead until it forms a dough. Feels like playdough

Roll into balls the size that you want your pearls to be. And let them dry. I let mine dry for 2-4 hours

As you're rolling the larger piece of dough may start drying out. Not to worry just add a few drops of water on the surface and knead again.

It's handy to have a damp paper towel and a bowl of the starch to help rolling.

u will need to roll the ball on the damp towel because it's drying and won't roll properly. If the towel is too wet you need to lightly roll it in the strach to fix that.

After cooked this is what they will look like. Mine are a little milky because that what I had them in b4 the pic lol.  Obviously these aren't the red ones I made for this guide.

Cooking: bring water to boiling then add pearls. Stir. When they float they are half way cooked. I like mine chewy so I only continue cooking for 10 more min. But you can leave it up to 20-25 min.

Then quickly drain pearl and put them in an ice bath. Cook your pearl just before making your tea :)

I cook them just before I use them. I would say no more than an hour after cooked. As for dried out so long as they are in jars they should last months. I haven't had mine as long so I don't really know.

Hi, can I ask you? I have made tapioca pearls several times and after every over night drying they cracked on the surface and when I put them into boil water, they broke into small pieces. Can you tell me where the error can be? Can it be that I did not use coloring? Thank you for answer. :-)
