How to Make Wicked Good Lemon Cookies

I always crave something Lemon as the warm weather arrives, found this recipe on allrecipe.com. I've made it every week since!

Step 1 of 15

Get all the ingredients to make the cookie dough ready

Step 2 of 15

Set the powdered sugar aside in a bowl for later

Step 3 of 15

Pre heat oven to 375 degrees

Step 4 of 15

Pour box of lemon cake mix into a mixing bowl

Step 5 of 15

Push cake mix to the edges of bowl to create a ditch of sorts

Step 6 of 15

Add all wet ingredients to the ditch: eggs, oil, & extract

Step 7 of 15

Beat wet ingredients slightly with a fork

Step 8 of 15

Then mix wet & dry together with a spatula. This dough is a bit sticky, you might think you need more liquid but you do NOT. Just keep working it :)

Stop mixing when it looks like this

Get your powdered sugar and a spoon ready!

I take a healthy tablespoons worth for my cookies, cookie size is a preference so feel free to do more or less and adjust baking time accordingly

Plop in powdered sugar and roll all around till covered

Step 13 of 15

Place on cookie sheet with plenty of room to grow!

I bake my larger cookies for 10-11 minutes and they come out perfect and chewy, for smaller cookies I would play more with 8-9 minutes

When done place on a cooling rack till firm. When they first come out they are a little squishy. They are very yummy! Salty, Sweet, & Refreshing with a nice iced coffee, Enjoy ;)

1 box of lemon cake mix

1/3 cup vegetable oil

1 teaspoon pure lemon extract

2 eggs

1/3 cup powdered sugar

I just used chocolate cake mix n no lemon extract. Yummies 😍

I love lemon stuff definitely gonna try this , if you like cake mix cookies/bars Paula deen has a recipe not for the faint of heart but these bars were so good we all got sick from eating too many and she did a cake mix recipe too
