Preheat oven to 350. Then start chopping the white choc; don't chop too fine or you will have shaved chocolate and not chunks
In a large bowl add 1 2/3 cup bread fl, 1 cup sugar, 1 heaping tsp pumpkin pie spice, 1 tsp baking soda, and 1/4 tsp each: salt and baking powder
In a separate bowl, mix 1/2 cup melted butter, 2 eggs, 1 c pumpkin, and 2 tsp vanilla. Once mixed well, add to the dry ingredients
Add your chopped chocolate (two white choc bars) and then, I add milk chocolate as well. The white choc alone is perfect if you don't want to mix in another kind
Scoop out 24 muffins. I also make a strudel topping: in the food processor blend 3/4 cup cold butter, 1Tb cinnamon, 2cups flour, 1 cup brown sugar and 1 cups oats
Once the strudel is mixed, lastly add an egg. It will hold the crumble better. Heap that atop each muffin. This crumble makes a lot, what you don't use place in freezer bag and store for another time
And are great for morning or after school snacks
