Add 1 tbsp of instant yeast to the milk & let it sit for 3 minutes.

Meanwhile, mix 3 tbsp of brown sugar and 2 tbsp of melted butter in a big mixing bowl.

Now, with the dough hook attached, add in 1 cup of flour and 1 tsp of fine salt. Knead.

Then add in the remaining 1 1/4 cups of flour and knead. This time, for 10 good minutes.

While that's happening, grease a bowl with either non stick cooking spray, melted butter or vegetable oil. Grease well!

Place it in the greased bowl, grease the top of the dough and cover with cling wrap.

Place it in a warm, not easily disturbed place for 1/2 hour or doubled in size. I usually put my dough in the oven. Turned OFF!

Now, preheat your oven to 180°C/350°F.

Take your dough, cut in 2. Then cut in 2 again, resulting in four. And cut each in 2 again.

To shape it, take one portion and roll it out as thin as possible. This is not the thinnest, I was baking alone which made it hard to snap picture since my hands were dirty.

Add 1/3 cup of baking soda into a bowl.

After you shape your pretzels, dip them in the baking soda mixture and place them back on your greased baking dish.

Well, I think kneading it longer would help. Also, you must flour your work surface heavily. Really makes the difference. It doesn't matter if it absorbs in too much flour cause it's a bread like dough. Not cookie dough. Plus, as it absorbs more flour, it gets less sticky and easier to work with. Anywho, glad you enjoyed your pretzel sticks. :)

It was hard to work with. Very sticky. Since I kneaded by hand I should have done it longer. It was hard making pretzel shape. After half I just made sticks. They tasted great.

Erica, no, I have never heard of them before. Ever since I can remember, we have bought her flour by bulk at a health food store but haven't ever thought much about buying online. As for what flours to use, I have seen recipes that call for more than one, but she hasn't ever used any others besides rice and potato flour, and I certainly don't know how to use ANY of them. Her flour is so expensive I fear baking with it much. May I ask how you know this - about nuts.com and their selling of gluten/wheat free products? Thanks for the suggestion - going to check it out now!!! :)

Amanda have you shopped nuts.com? Their prices on gluten free flours are amazing. You don't have to use just rice flour. There is chickpea flour and buckwheat which contains no wheat actually.

Sorry Amanda, I don't fully understand what you said. But no matter what flour you use, you can dip the shaped pretzel into the baking soda mix. And yes, that would make it softer too. Gamy, go for it!

Ok great!! Thank you so so much Farah!!! So if the baking soda makes them chewy, could I do the same thing to a gluten free hard pretzel recipe for my mom? I can't find any recipes for SOFT pretzels for her that I have all the ingredients for. I feel really bad for leaving her out, and her flour is super expensive so I'd rather not do too much experimenting in swapping out for her rice flour in your recipe. Does that make any sense??😝

Dipping them in baking soda gives the chewy crust on the pretzels. :) it makes 8 normal sized ones. I guess you could do that Amanda, after the first rise, place them in the fridge to stop the rising. When you're ready to bake it, shape it, and let it proof for 15-20 mins. After that you bake it!

Farah, is it possible to make these pretzels over a period of several hours? Like make up the dough tonight and let it do it's first time of rising, then in the morning, I can work on it some more, let it rise for the second time and then bake it? I'm trying to multitask with all that I need to do.

It sweetens the pretzels a touch but it's not sweet after its baked. And no, you must dip them in fully. Brushing won't do!

When I worked at aunt Anne's pretzels we learned this neat twist technique. Basically you hold the two end making like a 'u' shape in the air. Then quickly cross your hands making the dough spin around itself 2 or 3 times and then very quickly ( before it can unspin) laying it down (the side facing AWAY from you being the part you lay touching your surface) and fold in half to create the pretzel shape.
