This is is as easy as it is tasty. A good fall back dinner. Vegan and gluten free!
Chop onion. Sauté in a pan with olive oil over medium heat.
Add veggies and sauté until soft. Add milk, almond butter and yogurt. When hot add curry paste.
Serve over quinoa and enjoy!
