Once the first batch of butter melts away, add the remainder of the butter and a pinch of cayenne pepper (optional, if you're into that sort of thing)

The eggs will start to thicken, get creamy and small curds will begin to form.  This will take about 3-5 minutes. Continue whisking remembering to scrape the bottom and sides of the pan

Never mind, I just went with the flow as far as how much butter I used, but it turned out great! I didn't even have the desire to add cheese to my eggs like I usually do. The cayenne pepper added a nice little kick to the eggs...

I see that your recipe calls for 1 1/2 tablespoons of butter. In the first step, you apparently added 1 tablespoon of the butter. I'm assuming that later on when you add the remaining butter that its only supposed to be 1/2 tablespoon right? I'm asking because it looks like more than that in your picture.

@gio if you don't have a non stick pan, melt the butter first. that will make it so the eggs don't stick as much. if it still sticks, try a little bit of oil. maybe only a teaspoon

Wow. It took great patience on my part to completely change my life long "fast cook, high heat, lump egg" method, but I did it. And your method turned out perfect. FYI I have a silicon coated whisk and use a 5" non stick skillet which is perfect for 3 jumbo eggs.

I just made these and the taste is definitely awesome but the texture of mine was a little weird. They didn't curd up like eggs so much as like baby food. I had the stove all the way up to 3 and I whisked the whole time (which took longer than I think it's supposed to) and by the end the whisk was just picking up all the eggs instead of mixing them so I figured they were done.

it's almost unavoidable. we use an older pan and light pressure with the whisk. If we notice the nonstick surface suffering too much, I'll reseason it like a cast iron skillet and it helps
