Cinco de Mayo is almost here! Everyone always wants to know how I make my special Margaritas so here is the secret recipe. It takes a little preparation but it is so worth it.

Now put all the zest from the lime an put it in 2 cups of water. Place in your fridge for 30-45 mins.

Now you have some time to kill so go pay attention to your dog. She's pissed you're ignoring her. Ok, mission accomplished.

While waiting, Juice an apple or two. Or if you don't have a juicer just go get a small bottle of some decent organic apple juice.

Juice one lime and add It to you're shaker.

Let's be all fancy pants and cut up a lime for garnish purposes.

Ah, finally. When the 45 mins is up you can strain the zest from the water. Keep the water and discard the zest.

Now we are ready. Add to your shaker: juice from one lime, 2 shots of tequila, 1/2 shot of Cointreau,1/2 shot apple juice, 1 shot of lime zest water, and a bunch of ice. Shake vigorously!

Apple juice (freshly juiced if possible).

Margarita salt (optional).

I have to say I used this recipe to make Margs (short for Margaritas) this evening and they came out excellent. I doubled up the lime zest water because my and my girlfriend will have way more then two to three drinks and they were amazing. Great drink recipe

Scott, you could have sprinkled some superfine sugar over the zest on a piece of parchment paper on a cookie sheet... Let the zest dry... You could probably do this an the lowest setting possible that your oven has... Then when you feel the zest is truly completed, preserve them in an airtight glass jar. You have those pints... There's mason jars that's the smallest. When you want to be extra fancy, dip the rim of the glass in some water then slightly dip rim into your lime-sugar. Just a touch is enough and quite lovely!

Oh man, I fudged up. Shouldn't have been drinking the margaritas while writing the guide. 2 limes should do it. Zest both. Then use one for the lime juice and the other for the garnish. I just buy a bag of limes cause I'm usually making a ton of them, which is why I make 2 cups of the zest water.

@ Gabrielle. This recipe was from a little old lady in my travels to Mexico. This is the way she did it. Except she added a lot of sugar. I changed it slightly by adding the apple juice instead of the sugar.

Out of interest why not muddle the lime zest ? Wouldn't that deliver the same effect. For mixing it into the water?

Awe... Makes me feel so sad looking at sad eyes... Looks like she's saying, "might as well go back and do what you have to do, for you're only patting me a second..." our dog sometimes does that but rarely.
