Set aside vinegar and sugar. I know ..the suspense is killing me too!

Allow the water to come to a full boil.

Add 2 Tablespoons of sugar.

And 2 Tablespoons of Vinegar.

Mix well. Allow it to come back to a full boil.

Add ears of corn, fresh or frozen.

Making sure they are all under the water.

Replace lid to come back to full boil again.

For fresh, allow to come to full boil. Turn off heat. For frozen, full boil 10 min. Turn off heat.  The ears should be floating. Replace lid for 10 more min. to steam the ears. They're Ready!

The vinegar clings to whatever is between the kernels making them pop up and be crisp. The sugar does the opposite of salt. Salt draws moisture out of the food. Sugar helps the food retain its moisture which makes the kernels juicy.

Awesome!! So if that's true about the salt, why is it suggested to add salt to pasta? That doesn't make sense - unless you want dried out tasting pasta.

Chemical reactions. Vinegar binds with whatever is between the kernels and adheres to the water. Making the kernels perk up and be crisp. Sugar does the opposite of salt. Salt attracts moisture so draws moisture out of food, sugar repels moisture so kernels stay juicy.
