Hey Corrina, wish I could have seen them so that I make an informed analysis but possibly you may have used the wrong potato type. If you are using a waxy potato type especially on this recipe, it will not be as exciting but whatever the case would be, when you bake potatoes you only need to wash the outside thoroughly and after baking you should be able to enjoy the potato in whatever recipe you use it on. Try this one and if possible let me know how it was. Make sure u get baking potatoes like Desiree, King Edward, Coliban. Hope I answered your query! : )
