Start by cutting the heart up and rinse it under the tap for any blood. Cut off any remaining blood vessels. You can clearly see them here.

Add the meat to the bacon and brown it. Don't stir too much as it will lower the temp in your pot resulting in boiling instead of frying. Fry your veggies in another pot

Add apples and prunes to the pot.

Herbs crushed and chopped. Here rosemary, juniper berries, black pepper corns and a bay-leaf.

Combine everything in your pot and give it a stir

Lid on and simmer for 1 1/2 hour. You don't need to stir. Taste the gravy and add salt to taste.

😊 That is a great description of juniper sister Karen, I have to add that juniper is really delicious and something most folks haven't tried here in the states. They add such a savory richness to meat dishes especially! If you enjoy the flavor of rosemary you should enjoy juniper I believe Lisa.

Dear Lisa. A taste is impossible to describe just try in your head to describe the taste of milk, not easy😄 but juniper berries have a note of pine wood a bit of rosemary the same burning sensation you get in cinnamon but not the taste of cinnamon, a bit of earth and a hint of bitterness the same bitterness you some times have in red wine. That is the best I can do to describe them. Try them.

Dear Rane. Don't trick him. I think that what is so off putting to many, is the that when you see a heart you are confronted with the fact that an animal have been killed to fulfil your need for food. You can forget that when you see a pork roast. Respect his dislike but tell him that he sets an example for his child by trying to taste it.

Dear Rane. This is some of the leanest meat you can get. Great dish and a lot of taste for very little money. It blows my mind to think that only a fraction of a cow or a pig is eaten in the western wold. The rest is either used in dog food or destroyed. Such a shame.
