Prepare the Annatto oil by heating up 1/2 cup of olive oil with 2 tablespoons of Annatto seeds in a pot and sautée them over low heat until the oil turns red. The seeds need to "crackle" a little.

What kind of oil is Annato (sp?) oil? I usually get cold pressed evoo or olive oil... What is 'Sofrito' mainly used in, in terms of dishes? Thank you for your fabulous guide!

Thank you, Kai and Kevin. I'm curious about culantro/sawtooth/recaito now and will be looking for it, but it's also good to know I can use extra cilantro in a pinch if I have trouble getting my hands on it. Similarly with the Ajicitos, since you said they're a bit smoky, I'm thinking perhaps a little smoked paprika (in addition to an alternative pepper) might mimic that flavor if I can't find the Ajicitos?

@Kevin: yes, they look like habaneros but they aren't. Ajicito peppers taste like a smoky bell pepper with a little 'kick'. If you want more kick, you can include the seeds. Or add a little bit of cayenne pepper.

@Laura: culantro is like cilantro but about 10 times stronger. When you can't get it, it's also known as recaito. Or just double the amount of cilantro called for in the recipe.

But I got a question of my own - your Ajicito peppers, what could I substitute for those? They look almost like habaneros, but I notice you call for a pound of 'em so I'm guessing they're not that hot. What kinda flavor are we talking here?

Culantro is an herb you might find in Latin or Asian markets that have a produce section. It's used in caribbean food a lot. It has long, sawtoothed leaves and comes in a bunch like cilantro. It should be labeled either Culantro or Sawtooth Herb. The taste is kinda greenish.

Great guide, and I love the ice cube idea. I use cilantro a lot, but never heard of culantro - what is it like, and where might we find it? If we have trouble finding it, is there a good substitute?
