Preheat oven to 400 degrees Fahrenheit.
Combine the flour, cream of tartar, baking soda, and salt in a medium bowl
Cream the butter and 1.5 cups of the sugar together in a large bowl until fluffy
Add the eggs and beat until smooth
Stir in the flour mixture, a little at a time, until just combined
Combine the cinnamon and the remaining 1/4 cup of sugar in a small bowl
Scoop up a tablespoon of dough and roll it between your palms to make a ball. Roll each ball in the cinnamon sugar to coat it completely and place it on a baking sheet, leaving 3 inches between each
Bake your snickerdoodles until they are slightly golden around the edges but still soft on top, about 7-10 minutes
