How to Make S'mores Cupcakes!
Preheat the oven to 350 degrees Fahrenheit
For the graham cracker mixture: We will need 1 1/2 cups of graham cracker crumbs which should be about 15 graham crackers or so. Break them up in a blender, and blend until they are crumby
Pour them into a bowl
Then, add 1/4 cup of sugar
You'll need 5 1/3 tablespoons of melted butter. Put it in the microwave for about 15 seconds in a microwaveable bowl
Then drop it in the bowl
Mix well with a fork
Line your muffin tray
Drop about 1 tablespoon of the graham cracker mixture in the bottom of each cupcake line
And press down to line the bottom
P.S. Set the extra graham cracker crumbs aside to use as a topping later
Sprinkle 4 or 5 chocolate chips over the graham cracker crumb layer
Put them in the oven and bake for 5 minutes. Maintain the oven temperature
Take it out of the oven and set it on a cooling rack
For the cake mixture, clean out the graham cracker crumb bowl and pour 2 cups and 2 tablespoons of sugar (this is the dry ingredient bowl)
1¾ cups all-purpose flour
¾ cup plus 1 tbsp. cocoa powder
1½ tsp. baking powder
1½ tsp. baking soda
1 tsp. salt
Combine these ingredients using a whisk
In a separate bowl, crack 2 large eggs (this is the liquid ingredient bowl)
1 cup whole milk
½ cup vegetable oil
2 tsp. vanilla extract
Stir that well with a whisk
Then, add add the dry ingredient bowl to the liquid ingredient bowl and pour in 1 cup of boiling water
Stir just to combine (the batter will be thin)
Divide the batter evenly between the prepared cupcake liners, filling each about 3/4 of the way full over the graham cracker at the bottom
Return the pans to the oven and bake for about 18-20 minutes
Take the cupcakes out and set aside to cool
Now it's time for the marshmallow cream frosting. Add about 32 marshmallows(regular sized, not mini) and 2/3 cups of milk. Turn the heat to around medium high-low
Allow to heat until marshmallows dissolve then remove from heat. Mix, then allow it to set away from heat until it reaches room-temperature.
Pour it into a bowl attached to an electric mixer
Add 1 cup of butter to the mixture
And a teaspoon of vanilla. Blend at medium speed setting. Also add a whole jar of marshmallow cream (regular sized jar, not large jar) blend well
Cut a Hershey's chocolate bar into thin sticks. And cut the graham crackers into chunks or sticks
Spoon some marshmallow frosting onto a cupcake
Spread it around
Stick a chocolate stick
Then a graham cracker
Do this with the rest of the cupcakes
Sprinkle the remainder of the graham cracker crumbs on top and you're ready to serve!
