Evenly apply the herb/oil mixture on the chicken meat. Then wrap the skin back on.

Thinly slice the lemon and place slices on a ovenproof pan.

You can make some roasted vegetables in the meantime. Chop up some veggies, add olive oil, salt and pepper, place them on foiled cookie sheet. Roast in oven for 10-15 mins.

The rub is simple and delicious; not to mention smelling invigorating fresh. Skinning the skin and fat off of the chicken was a bit disgusting, but I made it through, and the end result was delectable main dish to a good meal.
