Mistakes I made were. I rolled my pitas too thin. So my pita was flatter and crispy. It tasted good and had a pocket inside. I've seen some recipes that call for a little oil in the dough.

Yes. It gets too thick. Some recipes call for a little oil in the dough. I added it the first time but not for this guide. It made no difference

I've seen a recipe that uses half wheat. I don't have any wheat flour at the moment. I think all wheat would change the recipe entirely.
