I loved this so much I've been making it a LOT, like 3 or 4 times a week. I put some cherry tomatoes in, too. About 10 minutes in, I take a couple of hunks of a crusty loaf, mop up some of the oil, and let them toast with the veggies until they're done. Janice's tip about the Parmesan was very appreciated, too, as it makes the flavors sing. Thanks so much for the guide. I love this new-to-me way to eat one of my favorite treats!
