Use any oil you like best. I like rape seed oil, I fry with it, bake with it and use it in salad dressings and when I make mayonnaise. It is mild and supports other flavours brilliantly.

Grind together garlic, mustard powder, salt and pepper. Add lemon juice, tarragon vinegar  and honey. Mix. Will keep in fridge for 14 days.

2 Or 3 garlic cloves

½ Teaspoons Mustard powder

½ Teaspoons Pepper

1 Teaspoon Salt

Juice of 1/2 a lemon

2 Tablespoons Tarragon vinegar

2 Ounces Oil of your choice

½ Teaspoons Honey

Put your tarragon in your vinegar, let it sit for a 2-4days in the sun and you have tarragon vinegar, you can just use vinegar or add tarragon. Try adding different spices to your vinegar and taste if you like it Also try with strawberry or raspberry that is very nice on salad

Yes I keep my garlic in oil so I have garlic and garlic oil with one stone. The garlic are just as strong as normal and as I use the cloves I replace them the same with the oil. Garlic have a natural preserving Quality so it will not go off. Just use a clean spoon and there you have it garlic and garlic oil with one stone😃
