Just made this... I used Asian eggplant. Yummy! I made it with the zucchini. I added the feta half way through...

Hi Serene :) yea off course that would be good, in fact I do that sometime. You can make as many variations as you like :) try with grated parmesan (but topped it after the baked process) it tastes awesome too :) thx for stopping by
