First you need to cook all the bacon. I find the easier way is to bake it in the oven. To do this preheat the oven to 400F. Line two baking sheets with baking paper and the arrange the bacon slices.

Once ready put them in the oven with the timer on for 8 mins. When the timer goes off turn the sheets around and cook for a further 5-8mins.

Transfer the bacon on to kitchen paper to absorb the excess fat and leave to cool.

Over a low heat slowly melt and combine all the ingredients

I take my time and do this slowly until it is smooth and glossy.

Take the larger amount of chopped bacon and stir into the fudge.

Take your 7 x 11 pan (either metal or Pyrex is fine) and spray with cooking oil.

Empty the contents of the saucepan into the prepared pan and then scatter the reserved chopped bacon over the top.

Once the fudge has cooled enough to put in the fridge, cover and chill until firm. This is generally a few hours, but I leave it overnight. Once firm, run a knife round the edge and tip out.

You would have to substitute the peanut butter chips for extra milk chocolate. But I've not tried this. If you are leaving those two out you might be better just looking for a plain fudge recipe.

Wonderful recipe-tried it with a few substitutions (couldn't find peanut butter chips, so just used Resse's Pieces instead) & it is wonderful-thank! :o)
