I like making homemade granola (probably because I used to be a total granola). Now I'm a mom and I try to cut out sugar wherever possible.

Here's everything I used for this batch. 6 c. Oatmeal, 2 c. dried cranberries, 1 1/2 c. almonds, 1/2 bag shredded coconut, 1/4c oil, butter, vanilla, 1 1/2 c sugar free maple syrup, cinnamon, & salt.

Combine all of your ingredients except for the cranberries (this is important - if you don't want a gooey mess). Stir it up! Easy.

Arrange your uncooked granola on two baking sheets and bake at 325 degrees for at least 45 minutes (depending on your oven) stirring every 10 minutes or so.

I've never tried omitting the oil. There are recipes that substitute orange juice. Let me know how it turns out if you end up trying it.

It should last at least 2 weeks if you bake the granola until it's nice and dry.
