I love your guides do you bake cakes and if so can you do one on a really moist vanilla cake i have problems with that or even a really good buttercream one that isn't filled with powder sugar?

Yes you can leave out the zest if you want. I would just add the regular amount, 1/2 cup of lemon juice.
