I place them in a glass casserole dish, season them to taste with salt, pepper and a bit of olive oil. ( also added paprika here)

In a frying pan with your butter stir fry the onions till they are translucent and then add your bacon, curry powder, salt and pepper to taste. Take off flame and set aside.

Add your sour cream, thyme to the zucchini pulp  mixture, give it a good stir, add the Roma tomato and the bacon/onion mixture. Stir well!

Generously "stuff" your boats with the filling and bake in the oven at 375 for about 30-45 minutes. Till tops are a bit browned and bubbly.

Voila! Garnish with fresh parsley or grated Parmesan and they're ready to serve! You can also add other various stuffing ingredients such as mushrooms, cheese, ricotta, olives.

Idk if this will help but at step 4 I places the zucchini with olive oil on it under the broiler for a few minutes .... This drew some of the liquid out of them & when I added the stuffing and baked they werent watery ....

Sounds & looks amazing. I will be trying this! Thank you it's so hard to find good recipes and different ways to use zucchini and eggplant and squash etc. But I think I could make this recipe work for all those veggies. Thanks cuz I'm trying to lose major weight and using this as a meal not just side is going to be great :-) God Bless!

Just made this. It's in the oven now. Doesn't look anything like yours but we tried to go as healthy as possible. Used rocotta, sour cream, bacon bits and mushrooms. I wish we could have used cheese like cheddar to make it more creamy. But the pram and rocotta will have to do!! Hope it's good!!

I like to cook it up a bit beforehand to be honest. Otherwise the onions tend to overlook when trying to keep up with raw bacon. But it's a personal preference. πŸ˜„

Just curious if it makes a difference if you cook the bacon beforehand then add it near the end of the stir fry or if you add it raw at the beginning.
