My husband loves jambalaya, but it's not my specialty. So I came up with a dish that I can throw together rather quickly. It tastes great, and is perfect for leftovers! Enjoy!

First heat your oil on medium heat and add the chopped onions, peppers and garlic. Sauté till tender for 10 minutes.

Next, add the creole seasoning and sauté to release the aroma. Mmmm smells good!!! *I also put in a little Jerk seasoning

I had 2 different cans of tomatoes, but normally I use the fire roasted for this recipe. It adds a nice, smoky flavor.

After a couple minutes add the cans of diced tomatoes, stir and let simmer for 5 minutes.

Stir in the tomatoes and taste to see if you need to add anymore seasoning, salt or pepper.

Cut up the sausage and add it to the sauce.

This is the sausage I used, however you can use whatever you like. There's a pretty big selection I have found at the supermarket ( in the hot dog section)

Cook for 8-10 minutes

Then add in the frozen shrimp and cook for another 5 minutes. *the sausage and shrimp are already cooked so don't cook longer than 10-15 minutes at the most or they will get dry.

Put some rice on a plate, ladle the jambalaya over and EAT!!! I tend to add some crushed pepper for more heat. So satisfying. Yum

20-25 Lg. sized frozen shrimp
