Add your peppers to the 2 cups of Vinegar in a large saucepan.

Add your Sugar and stir well.  Bring to a boil and let it boil for five minutes.

After boiling, strain pepper mixture.

Place mixture back on heat and add two packets of Certo. Bring to a boil.  Remove from heat and add Lime juice and food coloring.

Looks grand. My hubby loves jalapenos, will have to try this instead of making more chipotle jam. One question- I'm in the UK, so I probably will have to substitute the "Certo". How much do you get in a package?
