Dill both fresh and seeds very god , cumin not so god. Fennel seeds very god. Will try anise seeds for sure. Thanks for the tip.

I use a vinegar fungi I don't know what it is called in English but in Denmark it is called directly translated " a vinegar mother" I just crush my apples and put the fungi in the strained apple juice, then I wait for vinegar to be produced. How long it will take depend on how much apple juice and temperature

My dad used to make a similar pickle but used to also add white onions , spring onions and chopped lceburg lettuce and mint sauce ! Just an idea for a variation . Thank you for sharing this - I forgot how nice this can be x
