Home made Indian style kesar pista ice cream in 10 steps.
Start boiling the milk and keep whisking
Here is how I did it. After 5 minutes of boiling, add 10-11 spoons of sugar.
After 15 - 20 minutes, take about two spoons of custard powder and mix it with the boiling milk. Stir the milk while adding the custard powder.
Crush about 10-15 cardamoms and add them to milk.
Add saffron pieces till you see milk color changes from yellow to saffron.
Add heavy whipping cream, about 1.5 cups.
Crush about 15 pistachios and add them to the milk.
Let the mixture boil for about 10-15 minutes more. Whisk it.
Put the cooking vessel in cold water for 15-20 minutes. Once it cools down, pour the mixture out in a glass container. Put it in the freezer for 5-6 hours. After that the ice cream will be ready.

Can I use condensated milk as a short cut?
Good point. It is good to mix it 2-3 times to get rid of ice formations. I also think, adding heavy cream makes it creamier and less icy. I made it at midnight and didn't wake up to mix it :) but I would definitely do it next time
Both the home made Pizza and your icecream recipy tasted absolutely wonderful. I think that next time I will mix it every hour as it is freezing. This would reduce the amount of ice crystals. Brilliant recipy, thank you.
