Now you need to get your butter softened if you haven't already, so I just microwave it for 5-10 seconds at a time, turning the stick every time until, by touch, it feels softer but not melty.

Add the granulated sugar to the butter, start up your mixer, and mix away until smooth.

Then add the egg. I have chickens, so our eggs are organic. This egg happens to have a greenish blue shell! Cool huh ;)

Add the vanilla, turn on your mixer again, and mix the rest in! ;)

Now add your dry ingredients into the mixer and mix away until it looks like soft dough.

Get out your cookie sheet and line it with parchment paper, or you could use a silicon liner for non stick magic! ;)

Drop spoonfuls of sticky dollups of dough down on the tray, spacing them about an inch      or two apart.

Pour your powdered sugar into a bowl.

Then melt the 1 tbsp of butter in the microwave for about 30 seconds.

Omg my grandma makes these like holy Jesus I think between me and my husband we eat these within the day BADDDD I know but man you can't just have one and I love pumpkin BUTTT! Around fall she uses real pumpkin takes lots of work but wow are they good the icing is what really brings these cookies together like seriously tried it without the icing and it just doesn't work but for sure! These are a must have in your cook book :)

Also, my hubby said that the canned pumpkin has been cooked once before its canned, so raw pumpkin needs to be baked first, then scooped out, put into a processor for blending, then you can use it just liked the canned stuff! Happy cooking ;)

Hi Victoria and Marie-Anne B. So the pumpkin that I used was Libby's canned pumpkin. It's 100% Calabaza Pura. I believe that it's puree'd pumpkin in raw form. You can try fresh pumpkin and put it in a food processor. I prefer the canned variety to have the smoothness. I hope this helps ;)
