In a mixer, beat sugar, brown sugar, and eggs on high speed. Add in pineapple and bananas, oil, vanilla extract. Add the flour mixture. Divide batter into pans, bake at 50 minutes

Note: I decided to not put the pineapple into the cake mixture this time. Instead I used it in the icing---- I used most of the juice and some of the pineapple for icing combined w the coconut flakes

For the icing, use a mixer. Beat butter, cream cheese at low speed then add vanilla extract. Put in confectioners sugar 1 cup at a time, then mix at medium speed about 5 minutes

Since I only made 2 layers for the cake I decided to use the extra to make cupcakes!!!

Cool the cakes before flipping them out of the      pans

Once cooled, remove cakes from the pans. Layer them with the icing in between and on top. Mine turned out a bit runny this time but still tastes good ;)

I also had enough frosting for the cupcakes, which the hubby loves. The cake will be for our Memorial Day celebration tomorrow!!
