This basic granola recipe is super easy to make, and very customizable. I like to add dried fruit right before serving.

In a small saucepan, gently warm the honey, coconut oil, cinnamon, salt and vanilla. The ingredients will all dissolve and melt together. Stir well.

In a large bowl, combine the oats, coconut flakes and chopped walnuts.

Pour the wet mixture over the dry mixture.

Stir with a wooden spoon until well combined. This will take a couple of minutes. You want to make sure all the oats get coated with a bit of the wet mixture.

Place a piece of parchment paper on a baking sheet. Spread the granola on top.

Place in the oven. Stir every 8 minutes or so. The goal is to get the mixture as evenly browned as possible. It usually takes about 25 minutes for mine to cook.  When done, remove from oven, and cool.

Store in an airtight container. The granola will keep up to 2 weeks. Store in the fridge to keep longer. I like to add in bits of dried fruit right before serving. Enjoy!

6 Cups Rolled oats (not instant or quick cooking)

1 Cup Walnuts, chopped

1 Cup Coconut flakes, unsweetened

⅔ Cups Honey

⅓ Cups Coconut oil

2 Teaspoons Cinnamon

1 Tablespoon Vanilla extract

1 Teaspoon Kosher salt

Just put it in the oven! I used vegetable oil instead of coconut oil. I couldn't find coconut oil so I just used the vegetable. It tasted delicious uncooked!
