After a bit of grinding you'll start to get a nice paste forming. Keep going to get the consistency you like. I like it chunky, some like it creamy .  Add some peanut oil as you go to keep it smooth

Once you get it how you like it and you like it how you got it you can throw the butter into a mixing bowl. Add the honey to taste and mix either with a mixer or by hand if you're a champ like that.

When you get it to the smoothness  you want throw it in a jar and enjoy. I recommend immediately making a peanut butter and  jelly sandwich. Or...peanut butter and toast. OMG so many possibilities!

If you keep it tightly closed it should be good 1-2 months in a pantry and 3-4 months refrigerated.

A mortar and pestle would be pretty hard....I am sure it could be done though. I think the sea salt would be a great idea! I've tried adding a touch of cinnamon and a bit cocoa powder before and that turned out pretty well. If you try something else let me know! I would be interested to hear how it turned out!

Excellent, thanks Chris. Do you think it would be too much manual labour to do this with a mortar and pestle? Also, I'm a fructose avoider so honey is out for me. I know I can just go plain (although am inclined to throw in some sea salt) but do you have any other suggestions for a cheeky hint of flavour?

I inherited it from my mom...who got it from my grandmother. If you search for Universal Model 2 Manual Food Chopper/Grinder on Amazon you'll find it. The grinding plate I am using is for nuts. Some of the grinding plates are for meats or vegetables so just watch which one you get.
