Dice tomatoes into small pieces. Put tomatoes, Rotel, and tomato sauce in a large pot, mix well and cook on medium to medium/high heat.

While tomatoes, Rotel, and tomato sauce cook chop onions, green pepper, and garlic. Once tomato mixture begins to lightly boil reduce to low heat and add onions, green pepper, and garlic.

Step 5 of 7

Cook for 30 minutes. Finely chop all herbs and add to mixture. Bring to light boil for 5 minutes stirring constantly. Reduce heat. Add grated Parmesan, salt, and pepper. Cover and cook on low heat.

Cook sauce for several hours (I cook mine 3+ hours to get flavors out) stirring occasionally (stir frequently until mixture cools-especially on an electric stove that doesn't cool as quickly as gas)

10 tomatoes

1 green pepper

1 large yellow onion

2 packages of fresh Italian herbs

2 (or more depending on taste) garlic cloves

1 can Rotel tomatoes

1 can tomato sauce

1 can sliced black olives

Salt and pepper

1/2 c grated Parmesan cheese

I've sautéed my onions and peppers as well. This is just one variation of sauce I've made. This one is pretty easy and has good flavor.

I think there are as many recipes for Italian tomato sauce as there are different dialects throughout Italy!! There is a lot more to my recipe~from my Sicilian Nonna. Including 2 secret ingredients!

I always sauté my onions, garlic and fresh basil together with a touch of hot pepper in olive oil and the add the crushed San Marzano tomatoes, 1 can tomato paste, 1 cup spring or filtered water and 1 cup good (drinking quality) red wine...merlot, Pinot noir, or a good chianti.
