Dust a 9x9" baking dish with confectioners sugar. Set aside.

While sugar mixture is heating, sprinkle gelatin over remaining warm water. Place over a double boiler to heat until gelatin has completely dissolved.

In a separate bowl, whip egg whites on high speed until they form soft peaks. With mixer still on high speed, slowly pour in sugar/gelatin mixture.

Cate- sure! You can use them in any recipe that calls for marshmallows. I personally put mine between two homemade graham crackers and dipped them in chocolate for a s'more cookie.

It wasn't til AFTER the treats were made did I find out where gelatin comes from. ๐Ÿ˜– my goal is to keep my treats pure, using only the freshest, REAL ingredients and by-product free.

These sound awesome. I used to live by a wonderful lady that made them every Easter. She would take a lot of powdered sugar (2-3" deep) in a 13x9 pan and press a plastic egg into it then pipe in the mixture into to depression from the egg dust the top, let them set then she dipped them in chocolate and decorated them. Fun Holiday idea!!

Ed, what exactly is a patty pan? I've never heard of that term before. Next time I make them, I'm going to pipe them with a large star tip I think. You can use a large round tip to pipe them into peeps too! Just dust in colored white sugar instead of confectioners sugar.

They do taste like store bought marshmallows. You can also replace the vanilla extract with other extracts. Mint is nice for the holidays.
