These turned out great. I mixed 1/2 a cup of wheat bread crumbs with the Panko and that coated the areas of the onion that the coarse Panko didn't catch, and cooked for 11 min at 430F. Thanks!

Paleo or gluten free version: substitute almond or mix almond-coconut flour for the wheat flour; rough cut coconut shavings for the coating. Tricky part: temp and time. Depends on dryness of coconut, etc. so experiment.

Hi April, the temperature worked for me as the onion retained its firmness and quick high-heat oven will make the breading a lot crispier... though I only use a counter-top electric oven... I once tried at 200 degC, it took longer and the onion was cooked thoroughly. The same technique I've been using for my crusty outside soft inside breads.

There are sharp/coarse bread crumbs eg. Panko label or those used for japanese tempura... while there are also finer bread crumbs eg. progresso label which are usually used for bread...
