Add sugar and Elderflowers and boil until it sets. To see whether it has set or not put some on a cold plate and run your finger thru the cold jam. If it makes wrinkles it is done, if not boil on.

Farmers marked might have gooseberries Or ask for them, create a demand. They are in the same family as red currents and tastes lovely They are a rich source of vitamin C and contains a high level of pectin As for elderflower they grow like weed in hedges here in Denmark. You can use elderflower concentrate

Yes, they're hard to find in the US. Same goes for the elderflowers, unless you grow them yourself.
