It's just got to be the best salad ever! And Malouk, I agree with the "adding your own"! Not everyone likes "everything" you could put into a salad.

This salad is awesome! It is my favorite of all! When I make it though we broil the bread in the oven until it is a little brown and then crush it and we add Sumac spice and pomegranate molasses. Ohh so yummy!

Lettuce, parsley, scallions, cukes, radishes (if we have them) & tomatoes, chopped & placed over bread. Then we add fresh garlic, lemon juice, salt & olive oil, then toss. Since we love olives (Alphonso, Calamata, & Greek), we'll have these on the side to add to the salad as desired (not everyone likes olives). Years ago they toasted the bread in the toaster or over an open flame. While baking the bread is healthy, The taste having been toasted in oil is wonderful, and, olive oil is considered the "good cholesterol" when eaten in moderation. aboulli)

Doesn't the traditional recipe call for radish, parsley and sumac. Also for a healthier version I bake the bread

Thank you for your comment, first i never had a cucumber with a lot of water but i suggest you should cut them and put them in a sieve until they become less watery, and for the bread you fry them in oil, preheat the oil and toss the pieces of bread for a minuet or even less and then get them out. Malouk, do you scrape out the cucumber seeds or do you just chop the as they are? Some cucumbers especially the long thin European ones contain so much water that they make salad soggy. I found that by scraping out the seeds it works well for those thin cucumbers . Aren't they called English cucumbers? I was also wondering if you would be do kind to tell how you frites the pita bread. In oil or in a deep fryer? Thanks for the recipe, I certainly will try it. Can't wait for the weather to get better do we will have some fresh produce!
