Poor 1kilo of sugar into 1litre of water and put it on, until it  boils. Remember to stir constantly ........ It takes about 10 mins or so to boil

Bring to the boil for a few mins until its a light syrup with all the sugar crystals dissolved . Let it cool very slightly

Sprinkle over the 2tsp of vitamin c powder over the elder flowers and 2 chopped lemons

Wants it cool cover it up and put it in the fridge for 3-4 days

Then after the 3-4 days drain through a piece of muslin (or an unused new J-cloth) and bottle it .It will keep in your fridge for months if kept sealed. Once open, try to use within a week or so.

It tastes very fresh somewhere between citrus and and roses, the flowers on the other hand smells a little like cats urine but ones you soak them they smell really nice.
