I made a double batch of these to freeze. It's a super quick breakfast that just needs to be microwaved a few seconds. {The supplies list is for one batch.}

Preheat oven to 350 degrees.

Separate the crescent rolls and press one into each muffin cup.

Dice the slices of bacon and fry on medium until crisp.

Crack the eggs and add a spoonful of sour cream. Whisk with a fork.

Wow, making a second batch, kids love them (me too!) Fantastic idea, I've been making the eggs as I normally do with milk instead of sour cream, and for the second batch I've put the bacon into the eggs 1/2 way through cooking (better bacon distribution ;p) The kids can warm them up in the morning too, thanks again!

Donna: I figured about 210 per muffin. You could make it less by using the reduced fat crescent rolls, replacing some (or all) of the eggs with egg whites. Pretty much all the ingredients have a healthier alternative. Hope that helps.

I googled it and apparently they're hard to find in the U.K.. Somebody mentioned a refrigerated Sara Lee croissant dough that might be comparable. It's just flaky refrigerated dough that you roll into little crescents (like a croissant but way less classy 😊)
