How to Make Easy Poached Eggs

A lovely light breakfast consisting of Poached Eggs, Asparagus & Mushrooms

Here are the happy ingredients: asparagus, eggs, mushroom & lemon :-)

Asparagus dressing: Some butter, drops of lemon, salt & pepper

Boil the asparagus for 5 minutes then mix with dressing

Spread clean cling film on a surface & spread a few drops of oil all around till it's lightly covered

Transfer it to a deep bowl making sure it takes the shape of the bowl

Crack the egg inside

Carefully tie the cling film making sure its secure

Gently lower egg pouches into boiling water

The whites will start to cook & stiffen

Keep turning it around very carefully to cook all sides making sure you don't rip the pouch

About 6 minutes it's firm with runny yolks. If you want your yolks hard let it boil a few minutes more

Take it out with a slotted spoon

Rest on counter or plate

Gently slit the wrap using a knife. Make a slit large enough for the egg to slide out. Handle with care, as the yolk is still runny!

Add some butter to a pan & sauté sliced mushrooms. Add salt & pepper (I also added chopped parsley at the end)
