These are different takes on the burger; perfect for GameDay! Work quickly--the burgers cool quickly, since they're small. Experiment with different recipes; these are never the same twice!
Make balls of equal size with the ground beef a then start smashing them and adding your ingredients.
After folding the ingredients into the patty, put on the skillet.
For the patties to which you're adding cheese, make sure you flatten the ball out enough to get the cheese inside...
...when you fold it in. After the first fold, add more cheese on top. Continue folding in the cheese.
For sauces that you are adding, press a thumb into the ball, add the sauce, and start folding it in.
With the spicy mustard, I would suggest using the amount I used for the burger on the right; it had more spunk to it!

Pepperjack burger - pepperjack, onion, tomato, BBQ sauce; BBQ sauce burger - cheddar, dill pickle, onion, spicy mustard; spicy mustard burger - mozzarella, tomato, onion, spicy mustard.
