Here's a recipe for healthy fudge that I got from one of my favorite bloggers- Chocolate Covered Katie. (www.chocolatecoveredkatie.com) This fudge has no added sugar or processed ingredients.

Place 4 tablespoons coconut butter into a microwave safe dish. Microwave it until melted- I did it for 30 seconds. Coconut butter is coconut oil AND coconut meat blended together.  Sweet!

The melted coconut butter looks like this. You can make your own coconut butter - take dried coconut and purée it until it's smooth. So easy! But I'm lazy so I buy mine.

Mash up the banana with a fork. It's okay if it's lumpy.

Mix the coconut butter with the banana. Add the cinnamon and salt.

This is what it looks like mixed together. Place  the mixture into the freezer for an hour or so.

While the fudge is setting up in the freezer- enjoy a cup of green tea!

Keep the fudge in the fridge or freezer and serve it cold. This recipe makes about four servings.

Hi Sarita- I wasn't sure what coconut mana was- so I looked for it at the organic market. It appears to be a a form of coconut butter- it looks like it would be amazing. I think I'll try it in some recipes soon.

Hi Ida- you can buy coconut butter at any organic store. Look for Artisana brand. Do not buy coconut oil- the difference is the butter is the oils plus the coconut meat blended together! You can make your own coconut butter if you look at the recipe on a blog called "Chocolate Covered Katie". That's where this recipe comes from!

Michelle and Stephanie, I was going to suggest switching to some type of nut butter- like peanut butter or almond butter. Regular butter or margarine won't work. You could try using tahini. Not sure how well it will solidify. If you do try a substitute for the coconut butter let me know how it works! 😃

Can you taste or replace the coconut butter with anything .. These look lovely but I don't like coconut it would prob put me off eating it knowing coconut was in them .. :0( if anyone experiments or suggest pls let me no !

Oops! I just saw this comment! Please forgive me! I think Whole Foods sells coconut butter- it would be the brand "Artisana". If you Google Artisana they may show you what stores sell it. Or you can make your own!

Eileen, the coconut butter is what holds it together and makes it solid. The frozen bananas will thaw out pretty quickly. I keep the fudge in the freezer and serve it very cold! At room temperature the fudge will get really soft!
