I would probably guess its the chocolate your using. I would recommend cooking chocolate it tastes the same and melts into a smooth simple nice cream:) And with the chocolate falling of when you pull them off can be many reasons but try to use a non-sticking baking sheet or use a knife/cooking shovel and slide underneath the dipped strawberries. Its much easier to loosen the strawberries if you put them in the fridge after you dipped them in chocolate:) hope this helps

Couple questions: ok so I've been making chocolate strawberries for a while now but it seems like no matter what methods I try, my chocolate sometimes scorches. I've tried a double boiler and even just using a microwave. Also, when I set the dipped strawberries down to dry when I pull them off, I lose part of the chocolate because it gets stuck to the sheet or wax paper. Any advice?

Until the chocolate becomes cold/hard:) about 5-10 min. If you want to you can keep them for at least 4 days in the fridge until they lose there taste;)
