Melt the butter with the chocolate, I did this using the microwave heating a minute at a time until melted. Leave to one side.

Crack the 6 six eggs into a new bowl.

Add the caster sugar to the eggs and whisk until light and frothy.

Add the plain flour and fold it into the eggs and sugar to keep the air in.

Now get your melted butter and chocolate and mix together well.

Now gently mix the chocolate into the flour.

Grease the ramekins and pour the souffle mix  near the top.

Like so. Still bubbly which is what you want. Now you can cover with cling film and put in the fridge until required. They last a few days.

When needed, just stick them in a pre-heated oven 180c fan or 160c gas 4 for 8-12 minutes. If they have just come out the fridge I tend to find 11 minutes is perfect or 9 minutes if just made.

Tip for buttering containers: put hand in plastic bag(zip lock) get some butter on outside of bag and apply. Also you can put powered sugar inside one. Put another tightly on top and shake and you'll Ice two cups quickly. Pour extra in next buttered cup and repeat

You can also put them in the freezer (they last loooong) and them you bake them a lil longer. Works fine!
