Roast squash in the oven at 425F for about 25 minutes or until soft. Check w a fork.
Add olive oil to saucepan. Just a little drizzle
Add cinnamon until its as fragrant as you like.
Mash the squash until its soft no really big chunks. I don't have a blender, but if you do this would probably be easier.
Add milk and butter. I kept mashing because I saw a few chunkier pieces.
Stir with the mixture on low simmering slightly. I added a bit of salt and pepper at this stage.
I plan on putting this on some ravioli but you can put it over chicken or if you add cream and some shrimp or white fish it would be a great base for a bisque.
