This is such a tasty recipe! Change up that old boring broccoli!

Put some aluminum foil over a cookie sheet!

Get your broccoli. Make sure it's completely dry!

Cut it up into small florets, or whatever the proper term is!

Add olive oil. Recipe calls for 5 TBS but I eyeballed it.

Add salt! Eye ball it!

Pop it in the oven for 20-25 minutes or until it's crisp-tender and the floret tips are brown!

Then the recipe says add more olive oil but I chose not too. Also this is the time to add the pine nuts but I also skipped that step.

Final step is to add fresh Parmesan cheese! Enjoy!

I use broccoli, red potatoes & green/red peppers. Broccoli cut into florets, potatoes cubed skin on and peppers cut in strips. Put em in a big bowl add olive oil, salt, pepper, garlic powder, rosemary and thyme. Hand mix throw onto a cookie sheet. Sprinkle with Parmesan and cook at 425 for 25 minutes or so. Perfect side or main dish.

Used 1/2 broccoli and 1/2 cauliflower. Surprisingly yummy! I preferred the cauliflower to the broccoli, but I'm pleased to have expanded my diet by a couple of foods :-)

Omg yes it works great with asparagus too. Use kosher salt tho and pepper and don't skimp on the parm cheese. The best is fresh parm cheese graded on and melted. Yum!!
