Add 1/2 cup of sugar. Stir it in until the sugar is dissolved.

Now add the 2 cups of Flour + 1/2 teaspoon of baking powder. Slowly add little by little using a strainer to get rid of lumps. You can always use an electric mixer too.

Heat the oil to MEDIUM. You can use a small deep pan like this one. Once the oil is hot add the batter by spoonfuls. Once they start to golden on the bottom, flip. Only takes about 30 seconds to cook

Even if I fry my banana fritters for a long time - 5 min - they are still raw inside. The outside crust is nice and tasty, after frying in oil. But the main part, the inside is basically raw. And taste it. My fritters have a lovely brown color by the way. I think I do it right. But they are still raw. Not so cool.

TIP: instead of placing on a paper towel to blot? Use a wire rack with pan underneath to catch the "dripping". They will not get soggy on you and makes for better left overs. You did a great job.

Yeah, it's better if the bananas are realllyyy ripe almost black, and I added the flour little by little, I would stop and mix it and then add more. Sorry it didn't work out for you Kiel :(

I dropped the heat on the stove and made much smaller balls, batter the size of a large gum ball, this helped cook all the way through, I still think I messed up somewhere else flavor wise

Failure for me, my batter looks way thicker than yours, it started to gather up on my mixer, I had to stop at 1.5 cups flower. The thick batter made it hard to scoop. The inside of the balls remained uncooked, and the part that was cooked was very bland. The only thing I can think of is that my bananas were not overripe? I used an electric hand mixer throughout.

Just drop them in the oil by spoonfuls and keep the spoon over the batter while you're dropping it, the consistency is sort of like pancake mix (runny). The balls form on their own while it cooks because of the baking powder ๐Ÿ˜Š
